My mom’s TOP SECRET Thịt Nướng Recipe!! Lemongrass Pork Vermicelli Bowls (Bún Thịt Nướng)

THIT NƯỚNG MARINADE (by lb)
* 1 lb pork
* 4 cloves minced garlic
* 1 stock minced lemon grass
* 1 tbsp sesame oil
*1 tbsp any oil of choice —
* 2 1/2 tbsp sugar
* 1 tbsp fish sauce
* 1/2 tbsp soy sauce
* 1/2 tbsp oyster sauce
*1 tsp 5 spices powder
* 1 tbsp sambal or sriracha (to taste)
*1 tsp chili oil of choice
*1 tsp fresh ground black pepper to taste
* 2 tsp garlic powder
*3 tbsp coco rico

* Marinate for at least an hour but overnight for best results*

* 3 tbsp fish sauce
* 3 tbsp sugar
* 9 tosp water
* 1/2 tablespoon lime juice
* 1/2 tsp vinegar
* 4 cloves minced garlic
* Thai chili pepper (optional)

PICKLED VEGGIES RECIPE:
* 1 small daikon (julienned)
* 4 carrots (julienned)
* 3/4 cup of sugar
* 1 cup of water
* 1 tsp of salt
* 1/2 cup of vinegar

SCALLION OIL:
*1 bunch of green onions (chopped)
*1/2 tbsp vegetable oil
*pinch of salt

GARNISH
*1 head green leaf lettuce, romaine, iceberg or any leafy geeen lettuce or your choice
*herbs — we used mint and dấp cá (acquired taste, can be very fishy) *recommended herbs: cilantro, rau răm, and even Thai basil
*bean sprouts
*cucumber

Pork Marinade
1. In a bowl mix together all the ingredients under marinade garlic, shallots, lemongrass, sesame oil, sugar, fish sauce, soy sauce, oyster sauce 5 spice, sambal (or sriracha), chili oil, salt, black pepper, garlic powder and coco rico
2. Thinly your pork butt and belly and combine with marinade mixture and skewer the meat (optional). Let marinate for at least 2 hours (overnight for the best results)
3. Preheat oven to 400 degrees and bake the pork for 1015 minutes or until 80% cooked then turn your oven to broil until the pork is a nice and golden brown color on both sides.

Pickled Veggies
1. Julienne carrots and daikon and combine in a bowl with sugar and salt (let sit for 30 mins for best results)
2. Add vinegar, water and mix

1. Combine minced garlic, water, fish sauce, lime juice, vinegar and sugar and mix until the sugar is dissolved. Add in Thai chili to your liking.
2. Chargrilling or bbqing the skewers will yield the best and most authentic results. But for convenience, oven and air fryer are still great cooking methods.

Scallion oil
1. Thinly chop scallion / green onion
2. Add to a microwaveable bowl with oil and salt and microwave for 1 minute, making sure to give it a good mix after

Assembling
1. Assemble your bowl with noodles, veggies and garnish
2. Enjoy

Recipe notes
1. Premix the sauce in a bowl — that way you can taste and adjust before combining with the raw pork.
2. For the best results, chargrill or bbq pork skewers. For convenience use oven or air fryer.
3. Scallion oil can be sautéed in a pan, if desired.
4. Pork shoulder and any cut of pork can be used. We like pork butt and belly as it tends to have a higher fat content making it less dry.
5. You can substitute pork with chicken, beef, shrimp, or tofu
6. Thit nuong will also go great in a banh mi or on a rice plate
