Recipe Summary
2kg cleaned chicken thigh (skinless)
250g full fat greek yoghurt
½ lemon juiced and rind of whole lemon
2 cloves of garlic crushed
Generous amount of salt and pepper

Combine marinade, add chicken and coat thoroughly. Leave for min. 1 hour or preferably overnight.

Greek Salad
Cos Lettuce
Truss Tomatoes – quartered, deseeded and cut into chunks
Lebanese Cucumber – halved, deseeded and sliced
Spanish/Red Onion – Halved and sliced thinly
Kalamata Olives
Marinated Feta Cheese crumbled – at service

Dressing
Generous amount of salt
Splash of white vinegar (good quality)
Olive Oil (good quality
Toss with hands to combine and eat immediately
