Making "Mom's" homemade carrot cake from ACNH! Probably my favorite cake from the game, and all the other cakes are pretty cute as well!

Ingredients:
(For cake)
2 cups allpurpose flour
3 cups grated carrots (5 to 6 medium carrots)
4 eggs
1 teaspoon vanilla extract
1 cup brown sugar
1 cup granulated sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/4 cups vegetable oil

(For frosting)
8 ounces cream cheese
1 1/4 cups powdered sugar
1/3 cup heavy whipping cream

(For candy carrots, decorative only)
1 1/2 cups almond flour
1 egg white
1 1/2 teaspoons almond extract
Small pinch of salt
1 1/2 cups confectioners sugar
4 drops of green food coloring
10 drops of yellow, and 5 drops of red food coloring

Recipe
1. Preheat oven to 350F.
2. Whisk flour, salt, cinnamon and baking soda in a medium bowl until well blended.
3. In a seperate bowl, whisk the vegetable oil, vanilla, granulated and brown sugar. Whisk in eggs, one at a time, until combined.
4. Add the dry ingredients mixture in 3 parts, gently mixing until they disappear and batter is smooth. Stir in the grated carrots.
5. Grease two 9inch round cake pans and line the bottom with parchment paper and then grease the top. Divide the batter between the two cake pans. Bake for 35 to 40 minutes, or until the tops of the cakes are springy when touched and when a toothpick inserted into the center comes out clean.
6. Let the cakes cool in the pans for 15 minutes then remove from pans onto cooling racks, peel the parchment paper from the bottoms of the cakes and cool completely.

(For frosting)
1. In a large bowl, beat cream cheese with a handheld mixer on medium speed until creamy, about 1 minute.
2. Beat in the powdered sugar, 1/4 of a cup at a time until fluffy. Pour in heavy whipping cream and beat on medium speed for 1 minute. Chill covered until ready to frost on the cake.

(For candy carrots)
1. Mix the almond flour, salt, and confectioners sugar in a food processor and pulse until blended.
2. Stir the egg white and almond extract in a small bowl.
3. Add the egg mixture into the food processor until a dough ball forms.
4. Remove the ball from the processor and wrap tightly in plastic wrap.
5. Refrigerate at least 3 hours, or until you're ready to color and shape.
