For today's snack, I made a shortcake with lots of chocolate cream and strawberries in between.
I hit the sponge cake with syrup to make it moist and easy to eat.
▷Ingredients:
■Sponge cake (15cm)
2 whole eggs
60 g cane sugar
15 g milk
10 g unsalted butter
50 g cake flour
8g cocoa powder
Chocolate cream
80 g sweet chocolate (50% cocoa)
30 g milk
150 ml heavy cream
15 g cane sugar
16 strawberries
50 ml heavy cream
5g sugar
1/2 tsp vanilla extract
Syrup
2 tbsp cane sugar
2 tbsp hot water
▷How to make:
1. Whisk the whole eggs with the cane sugar until white.
2. Sift in cake flour and cocoa powder and mix until powdery.
Add melted butter and milk and mix.
Bake in a preheated oven at 170℃ for 25 to 30 minutes. When the sponge cake has cooled, slice it into 2 pieces.
5. Mix together the ingredients for the syrup.
6. Melt the sweet chocolate and add milk.
7. Beat the heavy cream with the raw sugar until loose and frothy.
8. Add the chocolate mixture and beat until the mixture is stiff and easy to spread.
9. Pour the syrup over the sponge cake, arrange the chocolate cream and halved strawberries, and sandwich the sponge cake between the sponge cakes. Cut off the four sides of the cake and arrange the strawberries on top.
10. Beat the heavy cream with the raw sugar and vanilla extract to a smooth consistency and squeeze between the strawberries.
