I'm spending 3 full days in the kitchen making meals for my family + lots of food for hungry deer hunters.

Quick & Easy Hamburger Hotdish
1 pound ground meat (I used about 1.5 pounds)
1\4 tsp. salt
1 bag frozen shredded hashbrown potatoes
1 medium onion
1 10.75 oz. can cream of mush soup
1 c. sour cream
2 c. shredded Cheddar cheese
~6 oz. French fried onions
Brown meat with salt and onion. Drain if necessary. In large bowl combine everything except french fried onions. Spread into greased 9x13 baking dish and bake at 350 degrees for 3040 minutes or until bubbly. Top with french fried onions and bake 1015 minutes longer or until crispy, but not burnt! 8 healthy sized servings.
*I added a lot more seasoning to the mix. Salt, pepper, paprika, garlic powder all to taste. We all liked this very much...even Maria.

Pumpkin Crunch Cake
15 oz. can pumpkin puree
12 oz. can evaporated milk
1 tsp. ginger
1\2 tsp. cloves
1\2 tsp. nutmeg
2 tsp. cinnamon
1\2 c. sugar
1\2 c. brown sugar, packed
3 large eggs
1 pkg. yellow cake mix
1 c. chopped pecans
3\4 c. unsalted butter, melted
Mix first 9 ingredients very well and pour into greased and floured 9x13 baking dish. Sprinkle on dry cake mix. Sprinkle on chopped pecans. Pour melted butter over all. Bake at 350 degrees for 4550 minutes. Serve warm or cold with whipped topping or ice cream. So good!!
