Let's Make French Onion Soup - Oven Roasted

French Onion soup is a seasonal favourite for me. I usually make it in the late Summer or early fall when the onion harvest is happening and there are good deals on larger bags of onions. It does take some time and effort but the results are a delicious and savoury soup that you can top with your favourite cheese. Enjoy.

3 to 4 Cups Onions
1 1/2 Litres Soup Stock
1  Litre Water (give or take)
1/3 Cup Butter
1 TBSP Oil (Olive or Sunflower)
1 TSP Salt
1 TSP Sugar
1/2 TSP Black Pepper
1/2 TSP Tyme
2 to 3 Cloves fresh Garlic minced
1 TB Worcestershire sauce

Cut up 3 to 4 cups of yellow onions and drizzle with oil and butter. Roast on baking sheets. First 1/2hr at 375F, stir to break up, then second half hour at 250F. Add to pot with 1.5L of soup stock. Cook at medium for 1/2hr then add rest of ingredients. Simmer for 1 to 2 hrs and then add water to bring volume back up. Continue cooking to get hot and then serve. Top with cheese of your choice. Enjoy.
