Ingredients:
Potatoes or sweet potatoes (~700 grams worth this is ~ 1 extra large and 1 medium or 2 large potatoes or 3 medium potatoes)
Low/no sodium seasonings (info for what I used below)
Avocado oil (if you're going to roast)

Directions:
1. Wash and cube your potatoes
2. Place in a pot of water and bring to a boil
3. Once boiling, drain water and replace with fresh water
4. Bring to a boil again for ~10 minutes
5. Add potatoes to a mixing bowl, toss with oil and seasonings
6. Place on a baking sheet and bake at 400 degrees x 2030 minutes

Nutrition info per 2/3 cup portion (makes 6 servings)
93 calories (without oil)
2.5 g protein
6 mg sodium
21 g carbs
1.5 g fiber
245 mg potassium
65 mg phosphorus
