Garlic Butter English Muffin 0:50
Eggs All'amatriciana 3:21
Sausage 6:06

Recipe:

Step 1: Make the Garlic Butter English Muffin (with Trevor!)
Ingredients
1 cup lukewarm milk
¾ tsp salt
¼ cup softened butter
3 cloves minced garlic
2 Tbsp chopped parsley
½ beaten egg
2 ½ cups flour
1 tsp yeast
Semolina flour for sprinkling
* DOUGH WILL BE FINISHED, THIS IS FOR THE RECIPE WRITTEN BELOW*

1) Mix together garlic, parsley, and butter.
2) Add half to the bottom of a stand mixer with a paddle attachment and reserve half for later.
3) Add the rest of your ingredients, except for the semolina, then mix on mediumhigh for about 5 minutes.
4) Add the dough to a bowl, cover with plastic wrap, and let rise 12 hours.
5) Roll out your dough into a rectangle, about a quarter inch thick. Punch out your muffins using a ring mold and put them on a baking sheet covered in semolina. Sprinkle semolina on top and cover lightly with plastic wrap. Let sit for 20 minutes.
6) Heat a frying pan—or electric griddle—on low heat and add as many discs will fit without crowding the pan.
7) Cook over low heat for about 10 minutes, until golden brown and crusty on the bottom, then flip and cook for an additional 7 minutes.
8) Melt remaining butter in the microwave, then brush on top
9) Remove and let cool on a baking rack for 10 minutes.

Equipment
* Stand mixer
* Electric griddle
* Spoon
* Plastic wrap

Step 2: Make Eggs all’Amatriciana
Ingredients
* 4 eggs
* 2 slices bacon, finely diced
* 1 cup tomato puree
* Pinch of chili flake
* Salt
* Pepper
* Parmesan

1) Place your egg rings onto a burner on low heat. Add a splash of oil to the rings and crack an egg in. Use a fork to break up the yolk. Cook eggs until set, then remove.
2) Heat a large frying pan on medium heat. Add bacon to the pan then stir until crispy and the fat is rendered. Add in tomatoes, salt, and pepper, and chili flake then continue to cook for 5 minutes until the sauce is nice and thickened. Add eggs to the sauce and grate fresh parmesan on top.

Equipment
* Egg rings
* Frying pan
* Silicone spatula

Step 3: Make Sausage and Assemble
Ingredients
* 1 lb ground pork
* 2 tsp salt
* 2 tsp sugar
* 3 cloves minced garlic
* ½ tsp chili flake
* ½ tsp crushed fennel seed
* ½ tsp dried oregano
* ½ tsp dried basil
* ¼ tsp black pepper

* 1 sliced English muffin
* 1 slice American cheese
* 1 little cup of mayo with black pepper and anchovy paste
* 1 egg
* 1 portion Amatriciana sauce

1) Add all ingredients to ground pork and mix thoroughly. Let mixture sit for at least an hour.
2) Add some sausage to a ring mold to form a disc, then cook it on a hot sautee pan for 3 minutes on each side, until cooked through.
3) Add sausage, egg, mayo, cheese, and amatricana sauce to english muffin.
4) Eat it.

Equipment
* 1 large mixing bowl with pork in it
* Fork
* Parchment square
* Ring mold
* Sautee pan
