Ultimate Vegetable Pulao

Ingredients:
Basmati Rice: 1 cup (soaked for 20 mins)
Water: 1.25 cups
Ghee: 1 1/2 Tbsp
Vegetable Oil: 1/2 Tbsp
Whole Spices: Sha jeera, cinnamon, clove, cardamom, bay leaf, star anise, mace
Cashews: A handful
Onions: 1 cup, thinly sliced
Green Chilli: 2, slit
Ginger Garlic Paste: 1.25 tsp
Salt: 1 tsp (or to taste)
Mixed Vegetables: Potatoes (2 small), carrot (1), chopped beans, green peas (1/2 cup), cauliflower (1 cup)
Diluted Coconut Milk: 2 cups
Lemon Juice: 1/2 tsp

Instructions:

1. Prep the Base:
Rinse the basmati rice until the water runs clear, then soak in water for 20 minutes.

2. Sauté the Flavors:
Turn on the Instant Pot and set it to 'Saute' mode.
Once hot, add oil and the whole spices and cashews Cook for 20 seconds. sauté until they release their aroma.
Add onions and green chillies, cook until onions are soft.
Stir in ginger garlic paste, cook for a minute.

3. Veggie Medley:
Add the potatoes, carrots, beans, green peas, and cauliflower. Sauté for 3 minutes.
Season with salt.

4. Combine and Cook:
Mix in the soaked rice with the vegetables.
Pour in the diluted coconut milk and lemon juice, stir well.
Check for seasoning and adjust if necessary.

5. Pressure Cook to Perfection:
Transfer the mixture to an Instant Pot.
Close the lid, set the valve to 'Sealing'.
Cook on 'Pressure Cook' mode at low pressure for 5 minutes.
Allow the pressure to release naturally (about 18 minutes).

6. Serve and Enjoy:
Once the pressure pin drops, open the lid.
Fluff the rice gently with a fork.
Serve the pulao hot, garnished with fried onions or fresh herbs if desired.
