Nitrite salt 11 g (1% of the weight of the brisket)
Sugar 11 g (1% of the brisket weight)
Ground black pepper 2 tsp
Ground nutmeg 0.5 tsp
Dry thyme (thyme) ground 1 tsp
Dry adjika 2 tsp
Bay leaf 3 pieces
Garlic 3 cloves
Put in a bag and refrigerate for 4 days
Turn the brisket over on the other side every day
Set the minimum temperature in the oven, no more than 100 ° C
Bake until the temperature inside reaches 80 ° C
It takes 2.53 hours
