Mint, Pea, and Pistachio Stuffed Sweet Potatoes:

This is really one of those a little of this, a little of that recipes, so taste and adjust the herbs and spices as you see fit! It's roughly:

1.5 cups frozen peas, thawed
1/2 tsp sea salt
black pepper to taste (I did about 8 grinds)
1/4 1/2 tsp red pepper flakes (or less, or none at all optional)
1 tbsp olive oil
1/2 a lemon
1.5 tbsp chopped parsley
45 mint leaves, chopped (or more to taste)
1.5 cups cooked quinoa
a big handful of chopped pistachios
4 medium sweet potatoes, baked for 1 hour or until fork tender

Combine the thawed peas, sea salt, black pepper, red pepper flakes, olive oil, lemon, parsley, and mint. Mix well and stir in the quinoa and pistachios.

Generously stuff the mixture inside 4 baked sweet potatoes (that have been lightly salted and dabbed with vegan butter if you like) and finish with a generous drizzle of runny tahini, a few more pistachios, and a pinch of sea salt on top.

My tip is to go easy on the lemon at first and then add it in as you like. You may also want a touch more olive oil and adjust the salt to taste.
