I had some Fresh Frozen whitefish from last spring caught while Ice fishing In Canada. The fish were placed in zip lock bags and covered in water to be frozen without any air bubbles. I find this method works best to preserve freshness the longest. I defrosted the fish in a cold water bath and separated the fillets while they were still icy cold. I mixed the brine with salt and brown sugar and let the fish soak overnight. That is where the video starts. So enjoy and hope you will be able to smoke some whitefish as well!
