BASIC MIXTURE
1 package, Cream Cheese, 8 OZ.
2 LBS, Powdered Sugar, 1 pound = 4 cups

Check the date on your cream cheese when purchasing, can get it a couple months ahead.

Let cream cheese come to room temperature, add powdered sugar a little at a time and cut into cheese with a fork or pastry cutter, after you have added a couple cups of sugar, pour mixture out on wax paper or counter top and continue to work the rest of sugar into cheese until you can work with it without sticking to your hands, will look like pie dough, will take about 2 pounds of sugar.
You can make many different candies with this mixture.

CHOCOLATE COVERED CHERRIES
Drain cherries on paper towels for about 8 hours, changing paper a couple times in this period. Using a little powdered sugar to keep it from sticking to your hands, pinch off a small amount of dough and press flat in your hand, wrap this around cherry and set on wax paper to dry. After dry you will need to dip the bottom again as there will be a hole in the bottom. You can set them on the same paper to dry, store in a container and in about 7 days they will liquify inside, do not refrigerate during this time.
