Although there is always an inherent risk of food borne illness when consuming raw or undercooked fish, by following a couple of rules, you will become familiar with how to tell whether salmon is safe to eat or not. The salmon must be fresh, smell fresh, look fresh, and preferably be a farmed product.
Farmed salmon are grown in controlled environments where it is unlikely that the fish will get parasites which can pass on to you when eating the fish.
You should never eat raw salmon that is wildcaught, as it is more likely to have parasites. You should also never eat raw salmon that doesn't look fresh and that smells bad.
