How to make queso mahon cheese at home

#queso #mahon or otherwise mahones is a semihard ripening #cheese made of cow's milk in the shape of a pillow. The flesh is white to dark yellow, and the skin is orange when rubbed with paprika and olive oil.

For production I used:

12l of cow's milk pasteurized at 65*C for 30 minutes
2.4 ml of calcium chloride
mesothermo cultures:
Lactococcus lactis subsp. lactis
Lactococcus lactis subsp. cremoris
Streptococcus salivarius subsp. thermophilus
Lactobacillus helveticus
Lactobacillus delbrueckii subsp. lactis
2.4ml calf rennet 1:17000
