How To Make Puerto Rican Alcapurrias at Home | Dining Traveler Cooking Series

I'm currently home with my family and cooking...a lot. Food takes me back to places I've visited and it revives happy memories of friends and family. This sixpart series focuses on places and recipes that I love. I am not a chef, just a passionate home cook.

For my first video, I started with a virtual trip to Puerto Rico with alcapurrias. Alcapurrias are a Puerto Rican fritter made with a masa of yautia (a root vegetable) and green bananas and filled with savory meat. They are the perfect comfort food treat and much easier to make than what you think!

Here's a step by step video how I made them, using my mom's recipe. (I even call her during the video for help!)

Alcapurrias:

Masa:
1 lb green banana (around 4 bananas)
1 lb yautia (one large or two small tubers)
1 packet of sazón
2 tbsp of achiote oil (if you can't find it, just do another packet of sazón)
Adobo to taste

Filling:
Note: you can use different fillings such as corned beef, ground beef, crab. For this recipe I used ground pork.
1 lb ground pork
2 tbsp tomato sauce
1 packet of sazón
1/2 cup of sofrito
1 small onion
1/3 cup of finely chopped olives (optional)
Cooking oil to fry
Banana leaf to shape the alcapurria (if you can't find it, brush some olive oil on the parchment paper.
