INGREDIENTS
4lbs Whole Fish or Sliced Fish (Scaled and cleaned)
1 Teaspoon Fish Seasoning
1 Teaspoon Salt
1 Teaspoon Pepper
1 Scotch Bonnett Pepper
2 stalks of Scallion
2 Garlic Cloves Vegetable Oil for Frying (Enough to cover fish)

Clean fish with Vinegar and Lemon

BROWN STEW SAUCE
2 Tablespoon oil
1Small Onion (Julienned)
1Tomato (Chopped)
1/2Green Sweet Pepper
1/2 Red Sweet Pepper
4Pieces of Scallion (Chopped)
4Garlic Cloves (Crushed)
1Scotch Bonnett
1⁄2 Teaspoon Ginger (Grated) or Ginger Paste
4Sprigs Fresh Thyme
68 Pimento Seeds (Crush)
1Large carrot (Peeled & Cut in Strips)
Okra (Optional)
1 Cup water or white Wine (I'm using Stone's Ginger Wine)
1 Tablespoon Green Seasoning
1Teaspoon All Purpose Seasoning
1Teaspoon Fish Seasoning
1⁄4cup of ketchup
1Tablespoon Sweet Chili Sauce (Optional, RedHot Brand)
1Tablespoon Vinegar
1Teaspoon Oyster Sauce or Soy sauce
