How to Make Fresh Bread with a Bosch Mixer

What a welcome aroma greets family and friends when homemade bread is baking! Here's the recipe using freshly ground wheat and the Bosch mixer:

1. Place the following ingredients in the Bosch Bread Mixer In the order listed:
6 C warm water or fresh potato water
1/2 C virgin olive oil
1/2 C honey
1 T salt
1/4 t ascorbic acid
10 C whole wheat flour
1 C regular oats, optional
1/2 C soy flour, optional
1/2 C gluten flour, optional
3 T active dry yeast

2. Jogswitch until flour is wellmixed; then add more whole wheat flour gradually until the sides of the bowl stay clean.

3. Knead on speed 1 for around 612 minutes until a good stretch is achieved. Turn out the dough onto lightly oiled countertop.

4. Dough is ready to shape into loaves or use for datecinnamon rolls; place in 150 degree (or slightly warm oven) and let rise for 2535 minutes. Turn the temperature up to 350 degrees and bake until golden brown.

5. Take out of the oven and place on racks.

6. Optional: spread olive oil on top of the loaves and frozen orange juice concentrate or other fruit juice concentrate on the rolls as a glaze.

7. Optional: After thoroughly cooling, you may place in bags and freeze.
