How to make Cloud Eggs!
Combine egg whites and keep egg yolks each separate.
Mix the egg whites until they form stiff peaks, add a pinch of salt and pepper
Spoon the egg whites onto a baking tray, making sure there is a well in the centre for the egg yolks
Bake for 8 minutes at 150c or 350f
Remove from the oven and gently add the egg yolks in the centre
Bake for another 3 minutes
Garnish with chives!
For the ham and cheese version, simply add chopped up ham and cheese into the egg white mixture before baking.
For the beetroot alternative, I think it's best to splatter a small amount of beetroot juice onto the eggs after the first bake just before you add the yolks.
