Shopping List:
1 Rotisserie Chicken
2 oz Cream Cheese
1/4 cup diced onion
1/4 cup diced celery
1 cup franks red hot
1/4 cup ranch dressing (plus more for garnish)
4 tbsps blue cheese crumbles
Eggroll wrappers
salt, pepper, garlic, onion powder
Garlic Paste 1 tbsp
shredded mozzarella
oil for frying
green onions for garnish
sriracha for garnish

Directions:
1. Begin by shredding chicken and removing any skin, cartilage, and bone. Cut into small pieces and add to a large mixing bowl.
2. Add your room temp cream cheese (or warm it in the microwave for 30 seconds) along with the hot sauce, celery, ranch, and blue cheese crumbles. Mix well to combine all ingredients. Season to taste.
3. Grab 1 eggroll wrapper at a time and gently wet the edges with either the egg wash or water (to ensure you get a tight seal). Add your mozzarella cheese and buffalo chicken mixture to the middle (don’t overfill the wrappers!)
4. Wrap the egg rolls tightly and ensure the edges are sealed. Repeat until all are finished.
5. Heat oil to 350 degrees and fry egg rolls in batches (about 45 minutes or until golden brown). Slice and garnish with sriracha and ranch if desired and top with green onion.
