Shopping List:
1.5 lbs Large Shrimp (raw, peeled, deveined)
Corn Tortillas
Cilantro
1 cup flour
1/2 cup corn starch
1 liter of oil for frying
2 eggs (for dredging)
salt, pepper, garlic, onion powder

Red Cabbage Slaw:
2 cups diced red cabbage
1/41/2 cup diced cilantro
1 tbsp rice wine vinegar
1/4 cup apple cider vinegar
1 tsp ponzu or soy sauce
2 tbsps white sugar
salt, pepper, garlic, onion powder

Pineapple Relish:
1 cup diced pineapple
1 diced jalapeno
1/4 cup diced white onion
zest and juice of 1/2 lime
salt, pepper, garlic, onion powder

Bang Bang Sauce:
1/2 cup mayo
1/4 cup sriracha
1/4 cup sweet chili
12 tsps soy sauce

Directions:
Prepare your slaw, relish, and bang bang sauce, ahead of time and place in the fridge. Ensure your shrimp are fully defrosted, peeled, deveined, and clean. In 1 mixing bowl, whisk 2 eggs with a splash of cream (or use 1 cup of buttermilk instead). In another mixing bowl, combine flour, corn starch, and seasoning. Dip the shrimp into the egg wash and then into the seasoned flour and then place on a plate or baking sheet. Repeat until all shrimp are breaded. Toast/Warm your tortillas and set aside.

Heat oil to 350 degrees. Fry shrimp for 34 minutes or until golden brown and 145 degrees internal temp. Begin building your tacos by placing the slaw at the bottom, and then add fried shrimp. Spoon on the pineapple relish and then top with bang bang sauce and garnish with cilantro.
