Box carrot cake
1 cup of water (or whole fat milk)
3/4 cup of vegetable oil (or melted butter)
3 eggs
1/2 cup apple sauce (or crushed pineapple, drained)
1/2 chopped walnuts
1/2 cup raisons
1 teaspoon of ginger
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg (optional)

Spray butter like bakers choice or pam or just melted butter.

Bake in the oven at 350 degrees or gas mark 4 for 2025 minutes or until a knife comes out clean.

1 1/2 blocks of cream cheese (12 oz or 1 1/2 cups)
1 1/2 sticks unsalted butter (6oz or 3/4 cup)
3 teaspoons of vanilla
4 cups of powered sugar (icing sugar)
Use a little bit of whole milk if you need the mixture to be a little creamier and use more powdered sugar if it's too runny.
