UPDATE: A student at Blue Line (shoutout to Joshua P) connected with me and informed me of a way easier and cheaper way to go about capturing this audio. He uses this $9 audio cord (linked below), plugs it into one of the, unused, rear passenger comm ports and...well...that's it! No having to splice between the headset and the comm port, and it's literally 510x cheaper than what I'm showing here. The only note I want to make is I have not seen the outcome of using this, so I can't put my word on the quality of the audio, but this student said it works for him. (Keep in mind, you will still need a GoPro adapter to plug the 3.5mm end of the cord into the GoPro, which is ~$50). Here's the cord:
