Cooking a meal without recipes doesn't have to be challenging it all comes down to how you approach building a plate. In this video I break down my process for designing a balanced and appealing plate of food, all without needing to consult a recipe. [Steps for recreating the meal below.]

Roasted Sweet Potatoes:
Wash and cut 12 sweet potatoes into wedges, then drizzle with olive oil, 12 generous pinches of salt, some ground pepper, cumin, cinnamon, garlic powder, sweet paprika, coriander seeds, and anise. Toss together until well combined and transfer everything onto a baking sheet. Spread into a single layer and place in an oven preheated to 225 Celsius / 437 Fahrenheit. Bake until the sweet potatoes are soft inside, brown on the edges, and a bit crispy on the outside.

Jammy Roasted Tomatoes:
Lightly score the skin of the cherry tomatoes with a knife, then drizzle with olive oil, a pinch of salt, ground pepper, garlic powder, a pinch of anise, and coriander seeds. Toss together until well combined, transfer to a baking sheet, and place in the oven along with the sweet potatoes. The tomatoes are done when they are soft and jammy.

Baked Lemon Feta:
Thinly slice half a lemon. Place a block of feta onto a large piece of aluminum foil and arrange the lemon slices on top of the feta. Sprinkle everything generously with a dried herb blend (ie: Herbes de Provence) and tightly fold the edges of the foil packet together. Place the foil packet onto the baking sheet with the tomatoes and return the baking sheet to the oven. The feta is done when it is softened and steaming hot inside the foil packet.

Arugula Salad:
Make a salad dressing by whisking together olive oil, salt, pepper, and lemon juice from ½ a lemon. Toss with the cleaned and dried arugula.
