A video about how I live simply and still enjoy the finer things whilst living alone and managing my own finances.

Simple living, minimalism and slow living should not be expensive nor complicated, but like myself I'm sure you've felt it be that way. I think there are a lot misconceptions about minimalism and slow living that it means deprivation and having to be super frugal, stingy and live a life of deprivation, but it really doesn't have to be this way. I live alone and manage my own finances and budget myself whilst living a simple living lifestyle and I can honestly say I have never felt more "rich" enjoying the simple things and being able to live a life where I don't have to compromise the quality of things.
In this video I want to share some tips and tricks how I live simply and budget whilst living alone that hopefully can give you some inspiration to enjoy the finer things in life on a budget without having to live a life of deprivation or extreme frugality.

Honey & Oat Artisan Bread

Ingredients

Dry ingredients:
390g strong white bread flour
60g oats
10g quick yeast
40g sunflower seeds or pumpkin seeds
2 tablespoons flax seeds
1 teaspoon salt
Wet ingredients:
120g warm water (not too hot!)
60g milk of choice (I use oat milk)
40g honey
1 tablespoon olive oil
Additional:
A few tablespoons extra flour for shaping
1 tablespoons sunflower or pumpkin seeds for on top of bread

Method
1.In a large bowl, whisk together the flour, oats, yeast, sunflower seeds, flax seeds and salt (dry ingredients).
2. In a jug add water and milk. Stir the honey and olive oil into the water/milk mixture once warm. Add wet ingredients to the dry ingredients and mix with a wooden spoon until just incorporated, do not over mix.
3.Cover with plastic wrap and let stand at room temperature for 2 hours or until doubled in size.
4.After the dough has risen, place it on a wellfloured surface and sprinkle it with a little flour. Using a scraper (or your hands is fine), fold dough over about 810 times and then flip over and shape into a ball.
5.Place dough in a parchment paperlined large bowl, sprinkle some seeds on top of the dough (optional) and cover with a warm towel. Allow the dough to rest (prove) again for about 45 minutes to an hour.
6.Right around the 30 minute preheat your oven to 230 degrees C and place your dutch oven inside to preheat.
7.Once the oven has preheated, remove the pot from the oven and immediately add the parchment paper with the dough to the hot pot (be careful as it will be hot!), cover with the lid and bake for 25 minutes.
8.After 25 minutes, remove the lid from the pot and return to the oven, uncovered.
9.Bake for 1015 more minutes until bread is nice and golden on top to your liking.
10.Allow bread to cool for an hour before slicing, then tuck in and enjoy :)
