With Alaska's Interior heating up and the late arrival of spring we embrace the chance to take a break from projects and collect dandelions and spruce tips right here in our own yard. We whip up a few delicious summer inspired treats with our harvested goods, including a new favorite, chocolate coated spruce tip & coconut popsicles.

~ Spruce Tip Popsicle Recipe ~
2 14 oz cans coconut milk
Juice of 2 limes
1 cup spruce tips
1/2 cup sweetener of your choice
(spruce tip jelly used in this video)

1. Blend all ingredients in a blender.
2. Pour into popsicle mold (recipe makes 12) then freeze.
Optional Coating
3. Melt desired amount of chocolate chips with 12 scoopfuls of coconut oil.
4. Remove popsicles and coat with melted chocolate mix, sprinkle coconut chips and return to freezer on parchment paper.
