Greek Steak Gyros Bowls u0026 Pitas

Ingredients
For the Steak Gyros:

1 pound flap steak (substitute flank or skirt steak)
1/4 cup olive oil
1/4 cup red wine vinegar
1/2 teaspoon salt or to taste
1/2 teaspoon freshly cracked black pepper
3 garlic cloves, grated
1 teaspoon dried crushed oregano
For the Rice pilaf:

4 tablespoons butter
1 cup vermicelli noodles
2 cups Basmati rice, rinsed and soaked
2 teaspoons salt
juice of a lemon
2 cups chicken stock or water
serve with :

pita
lettuce
tzatziki sauce
Pickled red onions
Instructions
Marinate the steak:

Slice the steak against the grain into about 1/2inch strips and transfer to a large bowl.

Add all of the seasonings, oil, and vinegar, and toss to coat. Set aside at room temperature while the rice is prepared or marinate overnight in the refrigerator.

Make the Rice Pilaf:

Rinse the rice under cold water 56 times and then soak it in the water for 1015 minutes.

Add the vermicelli and the butter into a pot and cook over medium heat until toasted. About 58 minutes.

Drain the rice and add to the pot along with the stock, lemon juice, and salt. Mix together and bring to a boil. Reduce the ehat to medium0low and cover the pot with the lid. Simmer for 15 minutes. Fluff the rice and serve or keep warm until the steak is ready.

Cook the Steak Gyros:

Place a cast iron skillet over mediumhigh heat.

Place the steak strips in the hot skillet in a few batches and cook them for 2 minutes. Flip over and cook a few more seconds then transfer them to a serving platter/bowl.

Try not to flip them too often so that they can get properly seared on one side and develop some crispy parts.

Serve the steak gyros over rice with tzatziki and pickled red onions. Kali Orexi!

Notes
Air fryer instructions: Preheat the Air Fryer to 400 °F for 5 minutes. Cook the steak in a few batches at 400 °F for 4 minutes on one side. Flip the strips over and cook an additional 2 minutes on the other side. Transfer the steak to a platter and cover with foil.
