In this video I take a break from the work on my off grid homestead in Central Portugal and enlist the help of my friend Kimbo to tackle the mountain of lemons that keeps getting bigger and bigger! We make Moroccan preserved lemons and an Indian lemon chutney and we have a lot of fun in the process!
Plus I head into the local market to buy a new tree, some plants, and plenty of seedlings and I get back into the garden.

Lemon Cordial
500ml water
500ml lemon juice
Zest of four lemons
650g sugar
Boil the water, disaolve the sugar, add the lemon juice and zest. Simmer until it thickens a bit (about 20 minutes). Cool, store in fridge!
You could experiment with less sugar as this is quite sweet. Also, the zest becomes delicious so if you like to make desserts, save it and see if you can find a use for it. I’d love to hear ideas!
