Today I am making another Family Favorite, Chili Colorado.
Ingredients
For the sauce:
6 ancho chili pepper (stemmed and seeded)
6 Guajillo Peppers (stemmed and seeded)
3 Chilies de Arbol (stemmed and seeded)
1 tsp Mexican Oregano
1/2 tsp Cumin
Salt and Pepper to taste
For the Chili:
1 TBSP Oil
1 small Onion
2 Jalapenos chopped
2 cloves of Garlic, minced
2 lbs Beef Chuck Roast cubed into 1/2 inch pieces or a quart of home canned beef
1/4 cup Flour
Salt and Pepper to taste
2 cups Beef Stock
Preparation:
Dry roast your chilies in a hot skillet
Set chilies in a bowl and cover with hot water for 20 minutes
Add Chilies, Oregano, Cumin, 1 cup of the soaking liquid and salt and pepper to taste to a blender and blend until smooth. And set aside
If you want to strain your sauce you can do that now.
Heat a large pot to medium heat and add oil
When oil is hot, add onion and jalapenos and sauté for 5 minutes or until fragrant
Toss your meat in the flour seasoned with salt and pepper
Add garlic and meat to your pot and brown meat on all sides
Add your chili sauce and beef broth and bring to a boil
Reduce heat, cover and simmer until meat is tender roughly 30 minutes to an hour depending on the size you cut your beef.
Serve with rice and bean!
Additional toppings can include Salsa, Guacamole, Sour Cream and hot Tortillas
