OATMEAL PANCAKES (gluten free!)
*approximate measurements! I do it by eye and it turns out fine every time
1 mashed banana
1 tbsp flax
cashew milk (around 1 cup, add more/less based on consistency these should be pretty thick!)
1 tbsp apple cider vinegar
1 1/2 cup rolled outs blended to oat flour (mix in whole flour or buckwheat flour for fluffier consistency)
1/2 tbsp cinnamon
1 scoop plant protein powder (I use Care/Of Vanilla)

CHICKPEA SALAD
celery
apples
raisins
chickpeas (1 can)
dill
adobo
black pepper
avo (or vegan mayo)

CHIPOTLE BOWL
brown rice
black beans
mild salsa
extra corn
guac
lettuce

1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
lemon flavor / zest & poppy seeds
*OR make BLUEBERRY pancakes!! (they turn out fluffier don’t ask why)
