Our Enchilada Meatballs are one of my favorite easy enchilada casserole recipes, with meatballs made from ground beef and cornbread, a red enchilada sauce spiced up with salsa, lots of melty cheese and toppings. Enchilada meatballs are a great party appetizer recipe and they're a quick TexMex dinner that's ready in about 30 minutes.

Enchilada Meatballs Casserole Recipe Ingredients
1 lb ground beef
2 cups prepared cornbread or cornbread muffins
1/2 tsp chili powder
1/2 tsp smoked paprika
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp ground black pepper
1/4 tsp kosher salt
1 large can enchilada sauce
1 cup salsa (I'm using Trader Joes Corn and Chili salsa, use your favorite)
1/2 1 cup cheddar cheese, shredded
Your favorite toppings for the enchiladas: avocado, sour cream, cojita cheese, more salsa

Enchilada Casserole With Meatballs Recipe Directions
This recipe needs 2 cups of cornbread, you can use leftover cornbread, buy cornbread muffins or make a quick batch. In this recipe, I used a package of Jiffy Corn Muffin mix and made an 8x8 pan, then let it cool before using. I made it using: 1 package jiffy corn muffin mix, 1 egg, 1/3 cup milk + 1 tsp white vinegar, 1/4 tsp kosher salt.

For the enchilada casserole, combine the 2 cups of prepared cornbread, the spices (1/2 tsp chili powder, 1/2 tsp smoked paprika, 1/4 tsp of cumin, garlic powder, onion powder, ground black pepper and kosher salt), 1/2 cup enchilada sauce and 1 pound of ground beef. Combine the mixture thoroughly, using your hands. Then shape the beef mixture into meatballs about an inch and a half in size, about the size of a golf ball.

Begin preheating the oven to 400 degrees. Heat a large skillet over medium heat and begin adding the meatballs. Cook on all sides for 2 3 minutes. While the meatballs are cooking, combine one and a half cups enchilada sauce with one cup of salsa. Pour the enchilada sauce over the meatballs, and bring the sauce to a simmer.

Add the cheddar cheese to the top of the meatballs and place the skillet in the heated oven for about 15 20 minutes, until the enchilada meatballs have cooked through and the cheese is melted.

I love how quickly this enchilada casserole comes together, the flavors are amazing! To serve, top with avocado, cilantro, cojita cheese, sour cream and all your favorite enchilada toppings. These are a super popular appetizer at our house, and this enchilada meatball casserole is a quick, easy and delicious dinner. Serve with rice, tortillas and your favorite veggies to make this a hearty meal!
