Recipe:
Yields: 1 Serving
Time: 10 Minutes
Rice:
1 cup cooked rice (short grain preferred)
1 tbsp rice vinegar
Pinch of sugar
Pinch of salt
Toppings:
1/2 carrot
1/4 pepper
1/4 avocado
1/4 block smoked tofu
1 tbsp vegan mayo
Pinch of salt
1 tsp sriracha
1/4 cup frozen edamame (thawed)
1/4 cup seaweed salad (optional)
Top with sriracha mayo, sesame seeds, nori
Serve with soy sauce
