Today I'm sharing two, easy recipes for summer side dishes that are filled with fresh veggies and don't require any cooking!
CUCUMBER CORN SALAD
1 English cucumber, chopped
3 bell peppers, chopped (I used red, yellow and orange)
2 bags frozen corn, thawed
1 bunch green onions, chopped
1/2 bunch cilantro, chopped
5 oz. feta cheese, crumbled
1/4 c. extra virgin olive oil
1/4 c. red wine vinegar
salt, pepper, garlic powder
Combine the cucumbers, peppers, corn, green onions, cilantro, and feta cheese. Whisk together the olive oil and vinegar with a pinch of salt, pepper & garlic powder. Pour dressing over the veggies and stir to combine.
CARROT SALAD
4 c. shredded carrots (67 medium carrots)
1/2 c. raisins
1/2 c. mayo
1 Tbsp. fresh lemon juice
1 Tbsp. sugar
Salt & Pepper, to taste
Poppy seeds, optional
In a large mixing bowl, stir together the mayo, lemon juice, sugar, a pinch of salt and pepper, and a sprinkling of poppy seeds (if desired). Add the carrots and raisins. Toss to coat. Eat immediately or cover and refrigerate to allow flavors to marry and carrots and raisins to soften slightly. ENJOY!
