Thanks for joining me for another meal prep video! On this weeks menu: tahini dressing, quinoa and lentils to go on top of my salads, cookie dough balls and easy tofu red curry.

(these aren't my exact containers but they are similar to the ones I have!)
red curry tofu ingredients
4 tbsp red curry paste
1 can coconut milk
1 cup veggie broth
2 tbsp tomato paste
4 cloves minced garlic
1 tbsp sweetener of choice I used monk fruit powder
2 packages firm tofu drained and pat dry
1 onion sliced
34 carrots chopped
1 red bell pepper chopped
Simmer all ingredients together in a large pot for 20 minutes until the veggies are cooked through.
Other things you can add minced ginger, salt, red pepper flakes, any other chopped veggies or greens
