Ingredients:
2 cups Uncooked old fashioned rolled oats
1⁄2 cup Unsweetened cocoa powder
1 tsp Ground cinnamon
1 1⁄2 tsp Baking powder
1⁄2 tsp salt
2 mediumlarge Bananas
2 cups Plain unsweetened almond milk
2 large Eggs
1⁄3 cup Monk fruit sweetener with erythritol(or calorie free sweetener of choice)
1 tsp Vanilla extract
2 oz Lily's Milk Chocolate Style Baking Chips
1⁄2 cup (or 64 gms 4 servings) PBfit Pure peanut powder
Water 1⁄4 cup(s), plus 1 Tbsp
cooking spray
In a large bowl, mix together the oats, cocoa, cinnamon, baking powder and salt. In a medium bowl, add in bananas and mash. Add in the eggs, almond milk, and 1/3 cup sweetener and mix until well combined. Pour wet ingredients into dry ingredients and mix until well combined. Spray a 8X8 baking dish with cooking spray and pour in oatmeal. In a small bowl, mix PBfit and water together until smooth. Pour over the top of oatmeal. Sprinkle the baking chips on top. Bake, uncovered, at 350 F for 4050 minutes or until oatmeal is set in the middle.
Store leftovers in an airtight container in the fridge for 57 days. Microwave to reheat.
