2 1/2 to 3 pounds yukon gold potatoes
1/3 cup butter
1/2 cup diced yellow onion packed cup
1 clove of garlic minced
1/3 cup flour
31/2 cups full fat milk
1/2 cup chicken broth
2 teaspoons dried chives
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon black pepper
1 1/2 teaspoons salt
