Ingredients (for 6 people)
4 lbs crisp cooking apples... like the Granny (Smith)!
1/4 tsp cinnamon
grated peel of 1 lemon
1/2 cup sugar

1/4 cup rum, cognac or apple brandy (optional, of course)
4 tb butter
4 eggs
1 egg white

2 cups lightly whipped cream flavoured with powdered sugar and 2 tb of rum, cognac or apple brandy (optional, of course ;))
