Crock Pot Pinto Beans Black Beans Pork Loin with Fried 🔥Hot Water Cornbread Fritters 😋

Crock Pot Pinto Beans, Black Beans, Pork Loin with Fried Hot Water Cornbread Fritters
16ounce package Dried Pinto Beans, sorted, washed and soaked in water overnight
16ounce package Dried Black Beans, sorted, washed and soaked in water overnight
In 2 different crock pots place each kind of bean and add the following ingredients to each crock:
1/2 a Yellow Onion
1 Tablespoon minced Garlic
1 Jalapeno cut in half
1 to 2 Teaspoons Salt
Fresh Black Pepper to taste
1 Teaspoon Smoked Paprika
1 Teaspoon Cumin
32ounces Chicken Broth
4 cups Water
Several Sprigs of Fresh Cilantro or 1 teaspoon Dried Cilantro
Cover with lids and cook 6 to 8 hours on high. Fish out the onion, jalapeno and cilantro before serving with fried hot water cornbread fritters recipe below.
CROCK POT PORK LOIN
3 to 5pound Pork Loin
1 teaspoon Salt
Fresh ground Black Pepper to taste
Sprinkle of Garlic Powder
Sprinkle of Onion Powder
Sprinkle of Smoked Paprika
Sprinkle of Cumin
1/2 cup Water
Several Sprigs of Fresh Cilantro
Place pork into a third crock pot with all the seasonings and water. Cover and cook for 6 hours on high. Remove and slice in 1/2inchthick pieces for serving.
HOT WATER FRIED CORNBREAD FRITTERS
11/2 cups Yellow or White Cornmeal
1/2 cup All Purpose Flour
1 Teaspoon Baking Powder
11/2 Teaspoons Salt
2 cups Boiling Water
Frying pot with at least 3 inches deep vegetable oil heating on medium high.
Mix the dry ingredients in a bowl with a whisk. Stir in the boiling water well. Scoop 1 tablespoon at a time into the hot oil and fry for 3 minutes. Stir and flip any if they need it. Fry for 3 more minutes. Take up and drain onto paper towels.
Cilantro/Lime Rice
2 cups Instant Rice
2 cups Water
1 Bay Leaf
1/2 Teaspoon Salt
2 Tablespoons chopped Cilantro
Zest and juice of a Lime
In a pan bring water to a boil with the bay leaf, salt and cilantro. Add the rice and return to a boil. Cover and turn off the heat. Let sit for 5 minutes to hydrate. Add the lime zest and juice and stir in well.
