These potato waffles are the easiest vegan waffles ever! Keep them plain and then serve them with your preferred toppings. I like to serve them with hummus, guacamole, salsa or anything else I have on hand. My favorite breakfast is potato waffles, tofu scrambled, some steamed spinach and mushrooms and some fresh tomatoes... yum!
