Ingredients:
✅Marinate the shrimp:
1 lb or more jumbo shrimp, peeled and deveined with tail left on, rinsed with cool water.
2 tsps olive oil
1 2 tbsp Wet Jerk Seasoning (There's a recipe in my amazon ebook https://www.amazon.ca/dp/B07JDZ5H2W/r...
or your may use one of my favourite brands: Jerk Central, Grace or Walkerswood.)
1 1/2 tsp Old Bay seasoning

✅Cook the Shrimp:
1 1/2 2 tbsps canola oil

✅Cook the Pasta:
Water to boil pasta
Salt as needed
2 1/2 3 cups dry Penne Pasta (cook according to package instructions then drain all water using colander)

✅Make the Sauce:
1 1/2 tbsp Unsalted Butter
3 1/2 tsps Sweet paprika
3 small Bell peppers cut in strips (red, yellow, green)
1/2 1 tbsp Jerk marinade or sauce
2 stalks scallion diced finely
3 cloves garlic minced
2 tsps minced thyme leaves
1/4 cup vegetable or chicken broth(if you can't find it at the store, grab a packet from your Ramen noodles or a boullion and dissolve a little in a 1/4 cup water Good to go)
2 cups whipping or heavy cream
2 teaspoons Maggi Allpurpose seasoning OR some other Caribbean allpurpose/chicken seasoning
1/8 tsp of ground allspice
1/2 1 cup grated Parmesan
1/2 cup grated Mozzarella or Provolone
1/4 1/2 cup Yellow Cheddar
Salt and pepper to taste
More sweet paprika for colour
Approximately 1 cup additional Mozzarella or Provolone added to pasta
Fresh chopped parsley for garnish
