Cold Strawberry Cake FRAISIER STYLE. 🍓MEGA DELICIOUS!!🍓

Hello, today I bring you a cake that is a flavor bomb, super fresh, delicious, nothing cloying, I would never get tired of eating it, this is one of the cakes that sold the most by portions because of how delicious it is and it is also much richer than the bakery ones, I assure you!! So I am very happy to share this delight with you today.

Ingredients for a 20 cm diameter mold:
Biscuit:
7 Medium Eggs
210 gr of common white sugar
210 gr of wheat flour without chemical leavening agents (all purpose, 000 or 0000)

Syrup:
In the video I made a smaller amount of syrup, but here I am going to leave you the full amount so that it gives you enough to moisten the three biscuits well.
1 and 1/4 Cup of common white sugar
2 cups of water

Strawberry jam:
300g of Strawberries (fresh or frozen)
100g of common white sugar
1/2 tbsp of corn starch
1 tablespoon lemon juice
1 tbsp water

Apart
300gr of fresh strawberries cut into pieces for the filling
(in case you don't want to use fresh ones as part of the filling, make double the strawberry jam)

Muslin Cream:
500ml liquid cow's milk
3 egg yolks
150 gr of common white sugar
65 gr of cornstarch
vanilla essence to taste
160g butter

Fruit Shine Gel:
3 tablespoons of common white sugar
2 tablespoons of water
1 tablespoon strawberry jam or lemon juice
1 tablespoon lemon juice
red food coloring

For the coverage:
500ml of whipped cream
strawberries to decorate
