Recipe
100 Grams Dark Chocolate (1/2cup +1tbsp)
Roux
15 Grams Butter (1tbsp)
10 Grams Flour (1tbsp)
120 Grams Milk (Cold) (1/2cup)
1 Egg Yolk
2 Egg Whites +20 Grams Sugar
Instructions
Preheat the oven at 200C
Grease the ramekins with Butter and dust with Caster Sugar
1. Melt the chocolate over a hot water bath and set aside
2. Melt Butter in a pan and add flour and cook for 1520 seconds
3. Add Cold milk and make a roux which is slightly liquid
4. Pour over the chocolate and mix
5. Add one egg yolk and mix until smooth batter forms
6. Whip two egg whites and fold in the batter and bake at 200C for 1214 mins
