Can Chocolate and Lemon really go together? That was the question my lovely wife asked when I told her I was making this recipe. Find out for yourself if it works.

Ingredients:
Crust:
1 ¼ cups graham cracker crumbs
⅓ cup butter, melted
¼ brown sugar
1/4 cup Cocoa powder
Filling:
1 ½ cup granulated sugar
⅓ cup cornstarch
1 ½ cup cold water
1 egg
¼ concentrated lemon juice
Topping:
Dark chocolate melting wafers
Directions:
1. Mix all of the crust ingredients in a small mixing bowl. Press into a 9inch baking pie dish. Chill for at least 30 minutes in the refrigerator.
2. In a small saucepan, combine the cold water and cornstarch.
3. When the cornstarch is dissolved, add the sugar, egg and lemon juice.
4. Cook over medium heat, stirring constantly until it thickens and comes to a boil.
5. Remove the thickened lemon mixture from the heat and let it cool completely.
6. Pour lemon filling into the crust.
7. Follow package directions to melt chocolate melting wafers. Once melted, pour over the top of the pie. (I melted them using my fondue set.)
8. Refrigerate to allow it to cool completely.
9. Serve and enjoy.
