You've been asking for this recipe and it's finally here! This Cheeseburger Soup is a favorite of our large family. This thick and hearty soup is full of beef, potatoes, and cheese. Even the most picky souphater is going to LOVE this one! (Scroll down for recipe below!)

CHEESEBURGER SOUP
2 lbs. ground beef
1 onion, diced
3 carrots, shredded
1 tsp. dried basil (we like to add more!)
5 cups broth (chicken or homemade bone broth)
4 large potatoes, cubed
8 Tbsp. butter
1/2 cup allpurpose flour
3 cups milk
4 cups of cubed cheddar cheese
salt and pepper to taste

In a large pot, cook beef, onion, and carrots until meat is thoroughly cooked and vegetables are softened. Stir in basil, broth, and cubed potatoes. Bring to a boil and cook until potatoes are tender. In a medium saucepan, melt butter then add flour to make a paste. Add the milk to the butter/flour paste and whisk together until the paste has dissolved into the milk. Add the milk mixture to the potato soup. Bring to a gentle boil and reduce heat to a simmer. Stir constantly and cook just until thickened. Turn off heat. Add cubed cheese and allow to melt.
