Charring your green beans is a delicious and easy alternative to normal old steaming or boiling. Master the charring technique once, and you can apply it to a whole range of vegetables. [Recipe below.]

Charred Green Beans with Cilantro and Pumpkin Seeds:
Serves 4

1 package of Green Beans (500 grams)
¼ cup Water
½ tsp. Salt + more to taste
3 Tbs. Vegetable Oil
Pinch of Pepper

2 Tbs. Cilantro, chopped
Handful of toasted pumpkin seeds
1 Lime, zested

Wash and prepare the green beans by snapping or cutting off the ends.

Heat a skillet over high until very hot, then add in the water, salt, and green beans. Cover the skillet immediately with a lid and allow to steam briefly. Once the water has mostly evaporated out, add the vegetable oil to the skillet. Stir to coat the beans in the oil, and add a pinch of salt.

Allow the beans to cook, without stirring, until the undersides are browned and blackened in places. Once the underside has started to char, stir the beans around so a new side comes into contact with the bottom of the skillet. Continue to cook until the beans have taken on nice color, are charred in place, and are tender yet crisp about 815 minutes depending on the size of your green beans.

Add in the chopped pumpkin seeds, lime zest, and chopped cilantro, and cook for another minute. Remove the beans from heat and season to taste with salt and pepper.
