Yam bean filling 沙葛馅
500g yam bean / sengkuang , skinned and shredded 500克沙葛去皮切丝
1 carrot, shredded 1 条红萝卜切丝
3 tbsp dried shrimp, soaked and chopped 3汤匙虾米浸软剁碎
2 tbsp chopped shallot and garlic 2汤匙葱蒜茸
2 tbsp cooking oil 2汤匙油

Seasoning 调味料
3/4 tsp salt 盐
2 tsp sugar 糖
1 tbsp light soy sauce 生抽
1 tbsp oyster sauce 蚝油
1 tsp ground pepper 胡椒料
1/2 tsp dark soy sauce 黑酱油
100ml water 水
1 tsp corn starch 玉米粉
1 tbsp water 水

Ingredients for skin 皮料
120g (1 cup) tapioca starch 木薯粉
120g (1 cup) wheat starch /tang mien fun澄面粉
1/2 tsp salt 盐
350ml boiling water 滚水
3 tbsp oil (油

Fried garlic oil for glazing
适量炸蒜油抹皮用
