We are grateful to harvest our first Alaskan porcupine on a beautiful early spring day. Back at the cabin we process and cook the porcupine over a warm campfire. Porcupine meat is rich and fatty, often compared to the taste of pork.

Fun Fact Porcupines are Alaska's second largest rodent.
