豬扒燜油麪

材料
豬冧肉一斤
油麪一斤
薑一小舊
蔥一條
辣椒仔一隻
蒜蓉

處理
1. 豬冧肉清水沖洗乾淨擎乾水。
2. 油麪清水沖洗乾淨擎乾水。
3. 豬肉切成豬扒放碟上。
4. 薑去皮蘑成蓉揸出薑汁在豬扒內撈勻。
5. 豬扒加入調味料
a. 生抽一湯匙
b. 老抽14湯匙
加入生粉一茶匙撈勻醃10分鐘或以上。
6. 辣椒仔切粒。

烹調
1. 大火在鑊內燒熱油一湯匙。
2. 豬扒放鑊內轉中慢火煎香。
3. 豬扒一面已煎至金黃色反轉繼續煎。
4. 豬扒加入
a. 蒜蓉半茶匙
b. 辣椒粒一半份量
轉大火加入糖一茶匙炒勻放上碟。
5. 轉慢火加入
a. 蒜蓉一茶匙
b. 豆瓣醬一茶匙
c. 糖一茶匙
d. 蠔油一湯匙
e. 老抽13湯匙
加入清水200毫升大火滾起。
6. 加入油麪撈勻燜至收汁。
7. 加入蔥粒一半。
8. 完成上碟。
9. 豬扒放上面。
10. 灑上蔥粒。
11. 可享用。

Braised yellow noodles with pork chop

Ingredients:
Pork butt meat 1 catty
Yellow noodles 1 catty
Ginger (small) 1 No.
Green onion 1 No.
Chili 1 No.
Garlic sauce

Preparation:
1. The pork, rinse with tap water. Drain.
2. The noodles, rinse with tap water. Drain.
3. The pork, cut in pork chop style. Put on a plate.
4. Ginger, get it peeled and mashed. Squeeze the juice into the pork. Mix well.
5. The pork, add seasoning:
a. Light soya sauce 1 tbsp
b. Dark soya sauce 1/4 tbsp
Mix well. Add in 1 tsp of tapioca starch. Season for 10 minutes or more.
6. Chili, dice in cubes.

Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. The pork chop, put in the wok. Turn to mediumlow flame. Fry well.
3. The pork chop, one side has been fried into golden yellow, flip over and continue frying.
4. Pork chop, add in:
a. Garlic sauce 0.5 tsp
b. Chili cubes (half)
Turn to high flame. Add in 1 tsp of sugar. Fry well. Put on a plate.
5. Turn to low flame, add in:
a. Garlic sauce 1 tsp
b. Chili bean sauce 1 tsp
c. Sugar 1 tsp
d. Oyster sauce 1 tbsp
e. Dark soya sauce 1/3 tbsp
Add in 200ml of water, heat up at high flame.
6. Add in the noodles, mix well. Braise until the sauce becomes thick.
7. Add in green onion cubes (half).
8. Complete. Put on plate.
9. The pork chop, put on top.
10. Put green onion cubes on top.
11. Serve.
