If ovens make you nervous, use a double pair of extralong mitts to handle your hot items. As a small person, 17 inches come up right below my elbow.

Pull out oven rack when placing or picking up items from the oven. Test this out when your oven is cold so you know how far the rack comes out, if it locks, etc.

When heating oil in a pan, flick water on it to hear how hot the oil is. Note, be careful to avoid pouring any more than a few drops of water as the oil will splash.
