Sugar Cookies so tender you'll make this recipe again and again! The most popular Christmas cookies of all are perfect for baking with children .

You can refine the cookie dough with real vanilla, gingerbread spice, real vanilla or even nuts as you like.
Since powdered sugar is used for the shortcrust pastry, it is sufficient if you let the dough cool for about 30 minutes before rolling it out. To make the dough firmer quickly, the ingredients should be as cold as possible.
Of course, you can also prepare the cookie dough in the evening and store it in the refrigerator overnight.
If you use normal sugar instead of powdered sugar, the dough should be cooled for at least 1 2 hours before further processing and then kneaded again. During the cooling time, the sugar dissolves and should be evenly distributed throughout the dough during subsequent kneading.

For a vegan version, you can replace the butter with an appropriate product of your choice and, for example, use 1 tablespoon of multivitamin juice instead of the egg yolk.

You can chop the shortcrust pastry particularly quickly in a multichopper, but the recipe also works if you knead the dough quickly as usual with your hands or a hand mixer.
Preparing the cookie dough in a multichopper works best when the butter is as cold and solid as possible. If you cover the butter cubes with the dry ingredients, they are less likely to stick to the edge of the bowl.
Depending on how well the ingredients are mixed, you may need to knead the dough briefly again with your hands.

Please do not add too much flour when rolling out the dough! Otherwise the cookies will be dry. The easiest way (and without any flour) is to roll out the dough between 2 layers of cling film or baking paper. If you dip the cookie cutters in powdered sugar or flour every now and then, no dough will stick to them.

For the shortcrust pastry:
2 cups + 2 tbsp (250 g) flour
¾ cup (85 g) icing sugar
2 tsp (1 sachet) of vanilla sugar
1 pinch of salt
Lemon zest
11,5 tbsp (160 g) cold butter or vegan alternative
1 egg yolk (medium size!). Alternatively, 1 tablespoon milk, multivitamin juice, rum

For decoration:
Icing sugar
Lemon juice
Sugar sprinkles, chopped nuts, food coloring etc.
